1 pound lean ground turkey breast 2 tsp of Low sodium teriyaki sauce 3 scallions, finely chopped 2 tsp grated peeled fresh ginger 2 garlic cloves, minced 2 tsp extra virgin olive oil 1/4 cup hoisin sauce (optional)1 pound bok choy, coarsely chopped, 4 cups 1 tsp dark (Asian sesame oil) 1. Combine turkey with teriyaki sauce, the scallions, ginger,and garlic in a bowl. Form into 12 meatballs 2. Heat oil in pan over med-high heat and add meatballs and cook, partially covered. Cook until browned turning occasionally, about 12 minutes. Transfer to a plate and keep warm.3. Add hoisin sauce 2 tbs of water, and remaining 1 tsp of teriyaki to skillet. Cook until slightly thickened about 1 min.4. Meanwhile, place bok choy in a saucepan with 2 tbs of water cover and cook until fork-tender, about 5 minutes. Drain and transfer into a serving bowl; toss with the sesame oil. Place the meatballs on top and drizzle with the remaining sauce.
